Cake Challenge #6 - Lime and Cream Cheese Cake
Okay - so granted, this cake isn't exactly the prettiest of cakes to look at ... but OMG! It tastes divine. Seriously. After making the cheesecake last week I had some left over cream cheese and when I discovered this recipe I decided it was worth a try.
It really was worth a try and this is going to become a firm favourite.
The recipe is taken from the latest Great British Bake Off cook book "Everyday" - definately go out and purchase this book if you like baking there are so many great recipes in there.
Ingredient wise you need: 175g unsalted butter, 150g full fat cream cheese, zest of 2 limes, 250g caster sugar, 3 eggs, 1/2 tsp vanilla extract, 225g self raising flour.
Oven should be set at gas 4/180c/250f.
Start with putting the butter and cheese in a bowl with the lime zest and beat well. Add sugar and beat until fluffy. In another bowl crack eggs with vanilla and mix, then add into the butter mixture a little but at a time (mixing as you go). Finally add the flour and fold this in. Put into a loaf tin and bake for about 55 mins.
Then when this is baking and you've washed all your bowls up - you create a lime syrup which is basically made up of 4 tbls lime and 50g caster sugar. Bring this to the boil in a small pan and when the cake is out of the oven (and still hot) pour the syrup over.
Let the cake cool completely.
Finally the icing on top is 150g icing sugar, zest of 1 lime and 1tblsp lime juice. Mix together and pour over the top of the cake.
Heaven on a plate.
